Air Fried Duck Fat Potatoes

Directions
Reduce potatoes lengthwise into ¼-inch thick matchsticks. Add to a big bowl and canopy with chilly water; let sit 30 minutes. Drain potatoes and pat dry. Place half the potatoes in a shallow bowl and toss with 1 tablespoon duck fats; liberally sprinkle with flaky salt.
Set air fryer to 370°F. Place potatoes in basket in a flat, even layer and fry 10 minutes. Flip potatoes and fry eight to 10 minutes extra, or till golden and crisp. Repeat course of with remaining potatoes. Serve instantly with parsley sprinkled on prime.
